Matcha Cookies with Creamy Banana Frosting

Matcha Cookies with Creamy Banana Frosting

Created by mincimumsar. These cookies are soft in the center, lightly crisp on the edges, and topped with a creamy banana frosting that just melts in. It’s familiar, a little nostalgic just done better.

Ingredients

Matcha Cookies

  • 100 g butter (room temperature)
  • 3 dl all-purpose flour
  • 1 dl white sugar
  • 1 dl brown sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp matcha powder (preferably from WAO Matcha)

Banana Frosting

  • 250 g cream cheese
  • 2 tbsp condensed milk
  • 1 banana (half mashed, half sliced)
  • Crushed biscuits (for texture)

How to make

  1. Make the cookie dough
Whisk together butter, sugars, and egg until smooth and creamy.
  2. Add dry ingredients
Fold in flour, baking powder, vanilla, and matcha powder. Mix until just combined.
  3. Chill
Let the dough rest in the fridge for about 20 minutes.
  4. Prepare the frosting
Whisk cream cheese until smooth. Add condensed milk and banana. Mix until creamy, then fold in crushed biscuits for extra crunch.
  5. Bake
Scoop the cookies onto a baking tray and bake at 175°C (350°F) for 12–15 minutes.
  6. Finish
Let the cookies cool completely. Top with frosting and finish with extra crushed biscuits.

Final touch

Soft cookies, creamy topping, a hint of matcha, it’s the kind of recipe you come back to.
